ingredients

mango lassi:

1 ripe mango, peeled, seeded and diced (about 1 heaping cup)

5 Tbsp. honey

13 tsp ground cardamom

1 c. So Delicious Vanilla Coconutmilk Yogurt Alternative

raspberry lassi:

1 c. raspberries

2 Tbsp. granulated sugar

12 c. So Delicious Raspberry Coconutmilk Yogurt Alternative

2 Tbsp. honey

    mango lassi popsicles

  1. In a blender combine the mango, honey and cardamom.
  2. Measure out the yogurt in a small bowl.
  3. Set both mixtures in the refrigerator for about 1 hour.
  4. Add the mixture to 4 ice pop molds, alternating between the mango mixture and the yogurt mixture.
  5. Take a toothpick or skewer and swirl it lightly.
  6. Insert the top of the mold and place in the freezer until firm, about 4-5 hours.

    raspberry lassi popsicles

  1. Combine the raspberries and sugar in a small saucepan and set over medium high heat and bring to a simmer, mashing the raspberries with a wooden spoon or potato masher.
  2. Simmer until the mixture has a syrupy consistency, about 5 minutes.
  3. Transfer to a bowl, cover and refrigerate for 30 minutes.
  4. Combine the yogurt and honey into a bowl and refrigerate.
  5. Add a few tablespoons of the yogurt mixture to 4 ice pop molds and top with the raspberry mixture.
  6. Take a toothpick or skewer and swirl it lightly.
  7. Insert the top of the mold and place in the freezer until firm, about 4-5 hours.

    To remove the popsicles from the mods, run under hot water until they easily release.

Makes 4 servings of each flavor
