ingredients

Chickpea Salad:

1 can of chickpeas drained, rinsed and mashed with a fork

13 c. vegan mayonnaise

14 c. finely diced celery

14 c. finely diced carrot

14 c. dill relish or finely diced pickle

12 tsp. onion powder

Salt and pepper to taste

Sandwich:

4 slices of bread (gluten-free if desired)

2–4 So Delicious American or Cheddar Style Slices

    Microwave Version:

  1. Mix all chickpea salad ingredients together.
  2. Toast bread slices.
  3. Place 1-2 slices of American Style or Cheddar Style Slices on each slice of bread.
  4. Add filling between the pieces of bread and slices.
  5. Microwave in 20 second increments until desired meltiness is reached.

    Skillet Version:

  1. Mix all chickpea salad ingredients together.
  2. Place two pieces of bread into a skillet with vegan butter or oil. Add 1 slice of American Style or Cheddar Style Slices to each of the pieces of bread.
  3. Cook with a lid until Slices have melted.
  4. Add chickpea salad to one side of the sandwich and combine. Makes 2 sandwiches.
