Directions

This lemony cake with berry bursts gets an extra tang from our Coconutmilk yogurt alternative.

Combine the Ingredients:

  1. Preheat oven to 375 degrees and prepare a springform bundt pan with vegan butter or parchment.
  2. In a large bowl, combine the egg substitute, Coconutmilk Beverage, yogurt alternative and grapeseed oil.
  3. In a separate bowl, whisk to combine the flour, sugar, baking powder, and salt.
  4. Gently fold the dry ingredients into the wet ingredients and stir.

Assemble the Cake:

  1. Gently fold most of the berries into the batter and pour into the prepared bundt pan.
  2. Top the batter with the remaining berries and sprinkle with turbinado sugar. Bake for 45-50 minutes or until a knife comes out clean.
  3. Allow to cool for 15 minutes before removing from the pan.
