This tangy Indian soup is made with vegetable stock, brown rice and Coconutmilk yogurt alternative.

Directions

This tangy Indian soup is made with vegetable stock, brown rice and Coconutmilk yogurt alternative.

  1. Heat the oil in a stock pot over medium heat
  2. Add the onion and cook until it softens and to brown
  3. Stir in the garlic and the brown rice and cook about 30 seconds or until fragrant
  4. Add the stock and bring the mixture to a boil
  5. Cook the mixture for 30-40 minutes, or until the rice is soft
  6. Remove the mixture from the heat and cool slightly
  7. Whisk in the yogurt alternative
  8. Return the pot to low heat, stirring constantly until just heated through
