Coconut Lime Cauliflower Tacos with Creamy Tartar Sauce and Coleslaw

Lightly spiced and breaded cauliflower gets dressed in sweet and sour slaw and a creamy, tangy vegan tartar sauce.

Directions

Lightly spiced and breaded cauliflower gets dressed in sweet and sour slaw and a creamy, tangy vegan tartar sauce.

  1. Preheat oven to 400 degrees F.
  2. For the slaw, whisk all ingredients together; pour over veggies in a medium bowl. Cover and chill for 30 min – 1 hr.
  3. Whisk the Culinary Coconutmilk with lime zest, limejuice and ½ tsp salt in a medium bowl. Set aside.
  4. Whisk the panko, cornmeal, shredded coconut, smoked paprika, cumin, garlic powder, turmeric, ½ tsp salt and pepper in a separate, medium bowl and set aside.
  5. Set up a station to bread the cauliflower in the following order: cauliflower, batter, breading.
  6. Place slice of the cauliflower with one hand and place it in the Coconutmilk batter, flipping to coat. Next, place it in the dry breading mix and flip with your other hand to coat.
  7. Place breaded cauliflower slices on a parchment-lined sheet and bake for 25-30 minutes; flip each slice halfway through the baking time, until both sides are nicely crisp and browned.
  8. For the tartar sauce, stir all ingredients in a small bowl and chill prior to serving.
  9. To assemble tacos, top tortillas with slaw, 2-3 pieces of baked cauliflower, and top with vegan tartar sauce. Garnish with lime juice or a dash of hot sauce.
