

VEGAN TOMATO PIE

ingredients
2 large tomatoes
1 large Vidalia onion
2 Tsp. salt
2 Tsp. pepper
1 Tbsp. fresh basil, chopped
1 C. So Delicious Dairy Free Cheddar or Mozzarella Shreds (or both!)
1⁄4 Tbsp. nutritional yeast
1 Tbsp. Italian blend dried herbs
1⁄3 C. vegan mayonnaise
directions
- Preheat oven to 350 degrees
- Slice tomatoes thin and lay them on a cutting board with paper towel
- Sprinkle them with salt, cover them with more paper towel, and allow them to dry for 15 minutes
- Combine the vegan mayonnaise, nutritional yeast, and cheese in a bowl and set aside
- Layer your tomato and thin Vidalia Onion slices in the pie crust, alternating layers
- Sprinkle the mix with pepper and drizzle olive oil over the vegetables
- Sprinkle on chopped basil and Italian herbs and then spread cheese/mayo mix on top
- Add extra basil on top
- Bake pie for 40-45 minutes or until golden brown
- Enjoy!
