Crepes

  • 2 large eggs
  • 1 34 c. So Delicious Unsweetened Coconutmilk
  • 1 c. all-purpose flour
  • 14 c. granulated sugar, divided
  • 14 tsp. fine sea salt
  • 2 tsp. lemon juice
  • Coconut oil, for frying

Toppings:

  • So Delicious Vanilla Coconutmilk Yogurt Alternative
  • Lemon zest
  • Fresh berries

directions

  1. Make sure that all of the ingredients are at room temperature, then combine them in a blender at a medium speed until the batter is smooth.
  2. Heat your pan over medium heat and brush it with a small amount of coconut oil. Make sure it is a very thin layer.
  3. Measure out ½ cup of batter at a time and pour it into the hot pan. Immediately begin to rotate the pan, to evenly spread the batter.
  4. Allow the pancake to cook for 2-3 minutes on the first side. If it begins to rip when you try to flip, give it a little longer.
  5. Flip the crepe and give it another 1-2 minutes on the second side.
  6. Add your toppings of choice and enjoy!
