Tomato Soup, Veggie Melts, + Pumpkin Smoothies

We’ve been cooking up a delicious partnership with our friends over at Whole Health Club, a personalized gym with an in-house plant-based kitchen. They recently invited the So Delicious team in for an inspiring cooking class to make three dairy-free and vegan recipes that we want to share with you! Tomato Soup

What you’ll need:

Directions:

  1. Preheat oven to 425 degrees.
  2. Place tomatoes face down on a baking sheet. Roast for 20-25 minutes or until skins start to peel off.
  3. On a separate baking sheet, place bell peppers, onions, and cloves of garlic. Roast for 20-25 minutes or until skin starts to peel off bell peppers.
  4. Once roasting is finished, peel skin from tomatoes and bell peppers. Add vegetables and garlic to a high-speed blender.
  5. Add remaining ingredients to the blender and blend until smooth. Adjust seasoning to taste.
  6. Top with So Delicious Dairy Free Mozzarella Shreds.

Veggie Melts

What you’ll need:

  • 1 bag So Delicious Dairy Free Cheddar Shreds
  • 1 zucchini, diced
  • 1 tomato, diced or sliced thin
  • 1 green bell pepper, diced
  • ½ red onion, diced
  • 1 cup arugula or spinach
  • Vegetable broth, for sautéing vegetables
  • 2-4 slices sourdough bread

Directions:

  1. Add chopped vegetables to a sauté pan with a splash of vegetable broth. Sauté vegetables until they start to soften, but do not overcook; you want them to have a good crunch.
  2. Once vegetables or done, place on bread and spread out the So Delicious Dairy Free Cheddar Shreds.
  3. Place sandwich on a skillet or sauté pan and grill on each side until bread is toasted and cheese has melted.

Pumpkin Smoothies

What you’ll need:

Directions:

  1. Place all ingredients, except Cocowhip, in a high-speed blender and blend until smooth.
  2. Serve topped with So Delicious Dairy Free Cocowhip to taste.
