Sweet and Savory Summer Galettes

Summer meals taste the best when they come together easily and beautifully, making good use of humble and fresh ingredients. Adapted from Julia Child’s classic recipe in Baking with Julia, our galette dough is vegan and gluten-free. It’s tender and delicious with a satisfying bite, thanks to a little bit of cornmeal. It’s also versatile and can be used with any sweet or savory filling you have on hand. Veggies, herbs, stone fruits and berries will all taste incredible when baked in a galette.

Because the dough can be made in advance, a rustic pie is a simple, go-to option for summer get-togethers, picnics and brunches. Just divide the dough into individual servings, wrap it in plastic wrap and chill it in the fridge. Whenever your garden offers up a bounty, you’ll be ready to roll and bake! Oh and, no tin required, just some parchment on a baking sheet. Easy as…well, you know.

Dessert First – Sweet Nectarine Galette

Since the dough recipe can be divided into three individual portions, we decided to try a few different fillings with ingredients that are gorgeous and plentiful in the summertime. First, we considered our sweet tooth (naturally).

In order to turn simple stone fruit into a delicate dessert, we took 2 or 3 firm nectarines to our mandolin and sliced them to create thin crescents. Once the slices were arranged in a circular pattern and our dough was pleated up around the edge, we sprinkled the top with turbinado sugar for a little extra sweetness.

Savory Snack – Galette with Cherry Tomato, Red Onion and Kalamata Olive

Cherry tomatoes are such a summer favorite. They’re so fragrant and juicy! When baked in a galette, they wrinkle just enough to release their juices, creating a tender surprise in every bite. For this cherry-tom galette, we added thinly sliced red onion, kalamata olives, a pinch of oregano and a drizzle of extra virgin olive oil.

Brunch Buddy – Red Potato Leek Galette

In our third galette, we combined sliced red potatoes, caramelized leeks, and black pepper for the perfect brunch companion dish.

An individual galette made with our dough recipe will probably come together with just 2-3 small red potatoes, and one leek. For perfect boiled potatoes with lots of flavor, season the water with salt and add a splash of white vinegar to the pot. Meanwhile, wash and slice your leeks. Heat a skillet on medium-high and melt a good knob of vegan butter before adding the leeks. Once the leeks are soft, sprinkle them with brown sugar and allow them to brown.
