Vegan Vodka Sauce Pizza

Bring a little intrigue to pizza with a rich and creamy vodka sauce, complemented by simple rustic toppings.

For the Vodka Sauce:

  1. Heat oil in large saucepan or stockpot over medium heat. Add onion. Sauté for about five minutes, until softened. Add garlic and sauté for another minute.
  2. Stir in diced tomatoes and vodka. Bring to a simmer and reduce heat. Continue simmering for about five minutes, until sauce thickens just a bit and the alcohol has cooked off.
  3. Stir blended cashews, Cashewmilk, salt and pepper into sauce and simmer, until thoroughly heated.
  4. Remove from heat and stir in basil or parsley.
