Vegan Tagine with Winter Vegetables and Creamy Harissa Sauce

This slow cooked recipe evokes a feeling of comfort thanks to a warm blend of ginger, cinnamon, red pepper and thyme.

  1. Heat olive oil in a tagine or a large pan over medium heat. Saute the onion and garlic in the olive oil for several minutes until softened. Add the spices and stir until they’re really fragrant.
  2. Add the vegetables and stir to coat. Add the chickpeas, apricots, and enough water to cover. Bring to a boil, then gently simmer for about 20 minutes, or until the vegetables are tender.
  3. As the tagine cooks, whisk together the Greek Style Cultured Coconut Milk, olive oil, harissa and garlic in a medium bowl. Season with coarse salt and pepper to taste.
  4. Once the tagine is ready, season the dish and fold in the chopped parsley. Spoon into bowls over grains and top with Creamy Harissa Sauce.
