Dress fresh, gluten-free pasta in this creamy compound butter sauce made with peas, shallots, lemon and Coconutmilk yogurt alternative.

  1. Melt 1 Tbsp. vegan butter spread over a medium heat
  2. Add shallot and cook, stirring occasionally, until softened
  3. In a food processor, blend cooked shallot, peas, pepper, lemon zest, 1 tsp. salt, and vegan butter spread until smooth
  4. Allow mixture to cool slightly and whisk in Coconutmilk yogurt alternative
  5. Toss with prepared gluten-free pasta

  1. Delicious! Even my picky child loved it. (I didn’t tell her it was made with peas). I feel like you could use this baseline recipe, and make substitutions to create different flavors. Going to try with roasted red peppers and/or tomatoes. Yum!
