Vegan Marshmallow Cream

This fluffy vegan confection is made with aquafaba and tastes absolutely wonderful on it’s own or in traditional dessert recipes.


For the Aquafaba:

  1. Beat the bean brine with a hand mixer for 7-10 minutes, beginning on the lowest setting and working up to a high setting, until the mixture thickens significantly, forming stiff peaks.

For the Marshmallow Cream:

  1. Gradually pour the sugar into the aquafaba. Mix for one minute and add the vanilla or almond extract.
  2. Add in 1 tsp of the xanthan gum. After a minute more, add the second tsp of xanthan gum and whisk.
  3. Drop the Culinary Coconutmilk into the aquafaba and add the salt. Mix for another minute or so, until the mixture is thick and airy.


Tip: Combine with vegan, gluten-free graham crackers and melted dark chocolate for crazy-good s’mores!
