Vegan Caramel Corn Crunch

This sweet and salty mix is ultimately munch-able, with popcorn, pretzels, almonds and chocolate coated in gooey vegan caramel sauce.

Directions

For the Vegan Caramel Sauce:

  1. In a small saucepan, combine all ingredients except the yogurt and vanilla extract.
  2. Gently heat the mixture, stirring constantly with a wooden spoon as the sugar granules dissolve
  3. Remove from heat and stir in the vanilla extract and yogurt alternative.
  4. Allow the mixture to cool and thicken as desired

For the Caramel Corn Crunch:

  1. In a large bowl, combine all ingredients except the mini chocolate chips until just coated with caramel (tip: to avoid overdressing, start with less caramel and add to taste)
  2. Line the tray of your toaster oven or a baking sheet with parchment paper and lightly toast for 3-5 minutes
  3. Remove from the oven or toaster oven promptly and sprinkle with mini chocolate chips
  4. Scoop into single serve bowls
