Vegan Butterscotch Pudding Parfait with Candied Walnuts

Traditional butterscotch pudding is made vegan and then layered with CocoWhip and sweet, candied walnuts.

Traditional butterscotch pudding is made vegan and then layered with CocoWhip and sweet, candied walnuts.

Make the Pudding

  1. Add brown sugar, cornstarch and salt to a blender and pulse until pulverized. Transfer to a medium saucepan and whisk in the Culinary Coconutmilk.
  2. Whisking constantly, bring to a boil. Remove promptly from heat and whisk in butter spread and vanilla.
  3. Pour into a gallon-sized reseal-able plastic bag and chill. Meanwhile, using a rubber spatula, transfer the CocoWhip to another gallon-sized bag and chill along with the pudding.

Make the Candied Walnuts

  1. Prepare a baking sheet with parchment paper.
  2. Add all ingredients to a hot skillet. Whisking constantly, cook for 3-4 minutes until the mixture is caramelized.
  3. Pour the mixture onto the center of the parchment paper. Using two forks, work quickly to spread the clusters outward.
  4. Sprinkle with sea salt as desired and allow to harden and cool to room temperature for 1-2 hours.

 Assemble the Parfaits

  1. Snip the corner of the plastic bags. Alternating to create layers, pipe the pudding and CocoWhip into individual serving cups.
  2. Top with candied maple walnuts and drizzle with Caramel “Yogurt Dip.”
