Vegan Benedict with Spiced Sweet Polenta

Layered with creamy avocado, ripe tomato and rich vegan hollandaise sauce, this benedict is perfection.



To Prepare the Vegan Hollandaise:

  1. Combine all ingredients except the salt and pepper in a blender until smooth.
  2. Add more Almondmilk as desired to adjust the consistency.
  3. Season with salt and pepper.


To Prepare the Spiced Sweet Corn Polenta:

  1. Heat coconut oil in a skillet.
  2. In a small bowl, whisk together the paprika and pepper and lightly coat each polenta slice with the mixture.
  3. Cook the polenta slices until the edges are crisp and brown.


To Assemble the Benedict:

  1. Layer the sliced polenta with ½ inch slices of avocado and tomato.
  2. Top with Vegan Hollandaise and garnish with fresh cilantro.
