Ube Crumble Muffins

Slightly sweet, these muffins are made with ube (purple yams) and topped with an irresistible pecan crumble.



For the Muffins:

  1. Preheat the oven to 350 degrees and prepare a standard muffin tin with vegan butter or paper liners.
  2. In a large bowl, combine and mix dry ingredients.
  3. In a separate bowl, whisk the Coconutmilk, vanilla extract and egg substitute.
  4. Combine the wet and dry mixtures.
  5. Fold in the mashed ube and melted nut butter. Mix well.
  6. Pour the batter into the prepared muffin tin, top with crumble (see below) and bake for 25-30 minutes.
  7. Remove from oven and cool for 5 minutes.
  8. Gently lift the muffins out of the pan and allow to cool completely.


For the Crumble Topping:

  1. Add ingredients to a mixing bowl and mash with a fork.
  2. Top each muffin generously before baking.
