Quinoa Fritters with Sweet Potatoes & Kale

These delightful fritters are great as the main attraction or a side. Plus, they make a great snack!


  1. Place all ingredients except the grape seed oil in a medium sized bowl and mix well.
  2. Heat grape seed oil in a medium fry pan over medium heat
  3. With a scoop or hands, form about 9-12 3” patties and place them in the pan.
  4. Cook for about 3-4 minutes on each side, until golden brown.
  5. Cool on a rack and serve with Dairy-free Ginger Dipping Sauce.
