Pumpkin Granola Crumble Bars

Wholesome, crunchy, slightly sweet bites of pumpkin spice delight.

Make the Granola Mixture:

  1. Prepare an 8″ square baking pan with parchment paper.
  2. In a small bowl, whisk together 1 Tbsp. flaxseed and 2 ½ Tbsp. water to make a “flax egg”. Set aside.
  3. Add the granola, brown sugar and salt to a blender or food processor. Pulse until well combined but not pulverized.
  4. Add the butter and flax egg to the granola mixture and stir until well combined.

Wholesome, crunchy, slightly sweet bites of pumpkin spice delight.

Bake the Crust:

  1. Divide the granola mixture. Reserve half for the topping and press the other half into the bottom of the prepared pan.
  2. Bake the crust at 350 degrees for 15 minutes, until browned. Allow it to cool before adding the filling.

Make the Filling and Add the Topping:

  1. Prepare two more “flax eggs” by combining the remaining flaxseed and water. Set aside.
  2. In a large mixing bowl, stir together all of the ingredients for the filling, including the flax eggs.
  3. Pour the pumpkin mixture over the crust and bake for 15 minutes before adding the topping.
  4. Return the bars to the oven and bake for another 20 minutes until set.

Cut and Serve:

  1. Allow the bars to cool completely before adding cutting.
  2. Serve with CocoWhip and hot coffee or Coconutmilk Nog. Enjoy!
