Tahini Vegetable Noodle Stirfry

Tahini is a paste made from sesame seeds that can be used to create creamy sauces and dips. This recipe is a take on noodles with peanut sauce, a Thai dish. Tahini gives this dish the same nutty flavor without peanuts, which are a common allergen.


  1. Mix together the coconut milk, tamari, vinegar, lemon juice, curry paste, tahini, ginger and sweetener in a bowl, set aside.
  2. Heat oil in a large frying pan or wok over medium heat. Sauté the bell peppers, garlic, green beans, carrots and any additional vegetables in oil for 5-7 minutes until they soften just a bit.
  3. After adding the sauce ingredients, lower the heat, and continue cooking until the sauce has reached a creamy consistency. Play with the ingredient amounts in the sauce to get the consistency you desire.
  4. While the vegetables are cooking, soak the rice noodles in a separate pot of very hot water for 5 minutes to soften.
  5. Drain and then add the softened rice noodles to the wok to soak in the sauce and vegetables for just a minute to mix up the flavors and sauce. Just before removing from heat, add a handful of chopped fresh Thai basil. Then toss and serve immediately.
