Maple Cream Sandwich Cookies

A tribute our Canadian friends, these cute little Maple Cream Sandwiches are sweet and satisfying!



  1. In a large mixing bowl beat the vegetable shortening and sugar together until fluffy.
  2. Add the coconut milk, maple syrup, and blend until combined.
  3. Add the salt to the mixture and add the flour in a little at a time until a smooth dough is formed. It may help to knead the dough a little on the counter to finish it off.
  4. Once combined, wrap with plastic wrap. Transfer to refrigerator for about an hour or until firm.
  5. Remove the dough from the fridge and preheat the oven to 350°F . Line a baking sheet with parchment paper or a silicone pad.
  6. On a lightly floured surface, roll out the dough and cutout your shapes with a cookie. We used maple leaves, but feel free to use a cookie cutter of your choice!
  7. Place cookies on the parchment lined baking sheet and bake for 8 – 12 minutes, or until just golden brown on the edges. Let cool before filling with your maple cream filling.

Maple Cream Filling:

  1. Beat the vegetable shortening until light and fluffy then mix in the icing sugar and salt.
  2. Slowly add in the maple syrup to the mixture and beat until desired consistency is met.
  3. Let the cookies cool then fill them by the spoonful.


Optional: Enjoy with a sprinkle of powdered sugar for an extra sweet treat!
