Layered Banana Jar Pie

This impressive no-bake pie in a jar shows off layers of creamy rich banana pudding with a crust made of dates, walnuts, & cinnamon. It’s also vegan and gluten free!

Directions

For the Crust:

  1. Place medjool dates, walnuts, cinnamon, and sea salt in a blender or food processor.
  2. Blend or process until a thick, dough-y consistency is achieved. The dough just be easily manipulated between your fingers.

For the Filling:

  1. Place all ingredients in a blender. Blend for 2 minutes. This should be extremely thick and gooey. If too liquid-y, add more cashews as needed. Don’t add any water, this filling should be like pudding.
  2. Place one layer of crust in a mason jar, then add pudding. Place in freezer for 30 minutes to set.
  3. Add another layer of crust, then more pudding, place in freezer, and repeat until all of the ingredients are used up!
  4. For layering, I added fresh banana and coconut cream, plus some crushed walnuts. Get creative here- add peanut butter, cacao nibs, and hemp seeds. Enjoy!
