Kale Apple Cheddar Salad

This delicious kale apple salad is sure to please when you top with our dairy free shreds!

Directions

  1. Massage 1 bunch of kale or 1/2 cup of Tuscan kale and 1/2 cup of red kale with olive oil to begin to break down tough fibers (ease digestion and makes it easier to eat).
  2. Remove center ribs and stack several leaves.
  3. Roll like a cigar and chiffonade into thin ribbons.
  4. Mix baby spinach, pecans, dried cranberries, So Delicious Dairy Free Cheddar Shreds and sliced apples.

For Dressing:

  1. Combine and whisk together lemon juice, cider vinegar, bee-free honey, and salt.
  2. While continuously whisking, pour extra virgin olive oil and whisk until emulsified and combined.
  3. Assemble all salad ingredients and drizzle on dressing.
  4. Toss and serve
