Jackfruit “Carnitas” Fajitas with Avocado Crema

These fiery vegan jackfruit fajitas taste just like carnitas. Serve with a dairy-free avocado crema to cool your palate.

Have you played with jackfruit yet? We at the So Delicious Dairy Free team just discovered it and might just be love at first bite. As soon as we bit into the meaty texture of the worlds largest fruit, the thoughts started running through our heads. Though it’s technically part of the breadfruit family, the flavor is almost artichoke or blossom-vegetable-like. And since it shreds and caramelizes so nicely when cooked, we though we would take on a vegan version of carnitas.

Tip: Be sure to look for the “Young Green” Jackfruit canned in water (not brine or syrup). This will have the meatiest texture and most neutral flavor. Look for it at your local Asian market or grocery store.

For the Jackfruit Fajitas:

  1. Drain and rinse the 20 oz can of young green jackfruit and heat your cast iron skillet to medium heat.
  2. Place 1 Tbsp. of oil in the preheated skillet and drop in the shredded jackfruit (two forks works very well for shredding the jackfruit ahead of time).
  3. Add half of the sauce and half of the fajita seasoning while stirring the jackfruit continuously.
  4. Add water as needed and continue to brown the jackfruit tender (about 20 minutes). Halfway through cooking, add the remaining sauce and fajita seasoning and any additional water if needed.
  5. Once tender, add the sliced peppers, onion and jalapeno to the skillet with the jackfruit and continue to stir until the onions are translucent and the peppers have formed some spots of dark color.
  6. Remove from heat and set aside.

For the Avocado Crema:

  1. Mix the Culinary Coconutmilk, Apple cider vinegar and spices together in a small bowl and whisk to combine.
  2. Add in the avocado slices and mash in to the wet mixture with a fork to incorporate.
  3. Whisk vigorously to combine, and squeeze the lime wedge over the mixture before serving

Assemble your fajitas to your liking and dollop the crema on top. Make it a meal and serve with a side of rice and beans—enjoy!
