Gluten-Free Vegan Oatmeal Chocolate Chip Cookies

Create this scrumptious recipe as a dry mix to keep on hand or give away to friends and family. Assemble with a few simple add-ins whenever you’re ready to bake!


To Assemble the Mix:

  1. Combine the flour, baking powder, baking soda and salt. Pour into a 1-quart jar. Level and pack.
  2. One by one, layer over the flour mixture the oats, chocolate chips, coconut sugar and shredded coconut. Seal with lid.
  3. Share the recipe on the top of your jar with a large or small printable label.


To Bake the Cookies:

  1. Preheat oven to 350 degrees F.
  2. Empty the dry ingredients from the jar into a large bowl and set aside. In a separate bowl, use an electric mixer to beat the melted coconut oil, prepared flax seed mixture (see below), Coconutmilk and vanilla for 2 minutes or until smooth.
  3. Add the dry ingredient mixture to the bowl and combine well.
  4. Drop the dough by large, rounded tablespoons onto an un-greased cookie sheet. Bake for 9-11 minutes or until edges are just brown. Remove from the oven and let the cookies cool on baking sheet for a few minutes before transferring to a rack. Makes 2 dozen cookies.
