Gluten-free Galette Dough

This vegan, gluten-free adaptation of Julia Child’s classic recipe works wonderfully with sweet or savory fillings.

Make the Dough:

  1. In a small bowl, combine the Coconutmilk Yogurt Alternative and beverage. Set aside.
  2. In a large bowl, combine the flour, cornmeal, cane sugar and salt. Add the cold, cubed vegan butter and mix with a fork until pea-sized clumps form.
  3. Add the yogurt mixture to the flour mixture and stir until soft dough forms. Divide into thirds and wrap in plastic. Chill for at least 2 hours.

Assemble and Bake the Galettes:

Note: try a variety of fillings such as apples or peaches tossed with sugar and cinnamon, red potatoes and leeks, or cherry tomatoes, olives and onions.

  1. Pre-heat your oven to 400 degrees.
  2. Allow the chilled dough to rest outside of the refrigerator for 10 minutes. From the center outward, roll the dough onto a floured surface with a floured rolling pin. Rotate the dough with each roll, flipping at least once before reaching a 5-6 inch diameter. Repeat for each third of dough.
  3. Add desired filling to the center of the rolled dough and carefully wrap the dough over the edge of the filling. As you assemble each galette, transfer to a large baking sheet lined with parchment.
  4. Brush the exposed dough with extra Coconutmilk Beverage and bake for 30-40 minutes until the crust is golden.

    1. Hi Nancy! We often use Bob’s Red Mill 1:1 Gluten-free Flour Blend, which includes xanthan gum. If your blend does not include it, you may want to add 2 tsp. of xanthan gum to this recipe.
