Gluten-free Banana Flax Pancakes

Wholesome, nutty cakes are stacked with fresh bananas and syrup in this simple, classic recipe.

Directions

  1. In a bowl or large cup, stir your apple cider vinegar or lemon juice into the coconutmilk and set aside.
  2. Measure and pour the remaining wet ingredients into a blender or blend with a hand mixture until smooth. You may need to blend some as you go with a regular blender.
  3. Once combined, add the coconut milk mixture and dry ingredients and mix again.
  4. Heat a frying pan over medium heat and place a small amount of vegan butter or cooking oil, about a 1/2 teaspoon, in the bottom of your non-stick pan for the first pancake.
  5. Once hot, scoop 1/4 C. to 1/3 C. of batter per pancake and place in the pan.
  6. Wait until bubbles form before flipping each pancake with a spatula (If bubbles don’t form, the pan isn’t hot enough). Heat the other side until cooked through.
  7. Repeat with remaining batter.

Note: The first pancake is usually your tester to see if your pan is hot enough or too hot. Serve immediately with your favorite topping: syrup, jam, or chocolate. Makes 16 pancakes.
