Enjoy this flavorful Coconutmilk Turmeric Rice as a delicious side or main dish. It’s super easy to make and the leftovers taste even better!

Place the rice into a 2-quart saucepan then spread out to cover the bottom. Pour the water over the rice, then sprinkle the salt over the top (do not stir) bring to a full boil uncovered on low heat.

Bring coconut oil to a medium heat in a frying pan. Saute garlic cloves, onion, and carrots. Add sprigs of thyme last.

Once rice is done cooking, fluff with a fork and add cayenne pepper and turmeric. Stir until rice is fully covered with turmeric and squeeze fresh lime. Add rest of ingredients, stir, and enjoy!
