Coconut Curry with Basil and Lemongrass

Our delicate green curry recipe makes a simple, one pot meal. With fragrant spices and a creamy, coconutmilk base, it’s an exotic addition to your weeknight dinner rotation.


  1. Heat oil in a 5 qt. stockpot over medium heat.  Add 2 Tbsp. curry paste and cook, 1 minute.
  2. Add green onions, garlic, and ginger. Stir and avoid browning, until softened.
  3. At medium heat, add vegetables and lemongrass. Stir occasionally until vegetables are just tender.
  4. Add vegetable broth and culinary coconutmilk and bring to a simmer.
  5. Add basil sprigs and gently simmer, about 5 minutes.
  6. Salt to taste. Garnish with bright green scallion tops and basil leaves.
  7. Serve with brown rice and lime wedges on the side.
