Chocolate Falafel in a Waffle

Dessert waffles with dark chocolate falafel balls. Pack them in a gluten-free waffle with some fresh fruit for a fun and sweet snack!

When we saw Hope’s new dairy-free Dark Chocolate Hummus, we were inspired to get into the kitchen, on a quest, to create a sweet version of the classic falafel sandwich.

The first challenge were the falafel balls themselves—we knew the hummus would need some texture, and selected toasted coconut and gluten-free cookies for the task.

For the Falafels:

  1. In a medium mixing bowl, empty the container of dark chocolate hummus and mix in the crushed toasted coconut flakes and cookie crumbs. Fold in with a spoon until well combined.
  2. On a small plate, sprinkle the coconut flour  until the plate is coated. This is what you will roll the falafel balls in.
  3. Place the coconut oil in a small saucepan or skillet and pre-heat to medium-low.
  4. Spoon a small amount of the hummus mixture into the palm of your hand and form into a ping-pong-ball sized falafel.
  5. Roll the falafel ball lightly through the coconut flour until evenly coated and set aside.
  6. Repeat with remaining mixture until all are coated.
  7. In the hot oil, lightly place in two of the coated falafel balls.
  8. Roll them around frequently and baste them as you go with excess hot oil.
  9. They will be done quickly – about 1 minute per falafel ball total.
  10. Once they are cooked set aside and repeat.

For the Sandwiches:

  1. Prepare a batch of our Classic Belgian Waffles per the instructions
  2. Slice your fruit of choice, and layer into each waffle
  3. Place the cooked, chocolate falafel balls in the center of each waffle (about 3 per sandwich)
  4. Drizzle with vanilla yogurt alternative, then fold and enjoy!
