Gluten-Free Chocolate Chip and Cocoa Nib Cookies

You won’t miss the butter or the gluten in these creamy, brown sugar chocolate chip cookies.

Directions

  1. In a large mixing bowl, Add the sugars and vegan butter. Cream with a hand mixer or stand mixer until smooth.
  2. Then add the vanilla, and culinary milk. Cream again until well combined.
  3. In a separate bowl, stir together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients and combine until a heavy batter forms.
  4. Fold in the chocolate chips and cocoa nibs using a spatula.
  5. Spoon Tablespoon sized balls onto a greased cookie sheet and bake at 350 degrees for 8-12 minutes. Allow to cool for 5 minutes before serving.

  1. I am sure I added the right amounts. However the mixture melted into one whole very soft puddle. Theres something wring in the amounts of ingredients I think.

    1. Hi Syliva! Sorry you had trouble! We recommend checking your baking soda for freshness, as it can expire and lose effectiveness. For a quick test, add 1/4 tsp of your soda and 1/4 tsp of vinegar to 1/2 C. hot water. If it doesn’t fizz, it’s time to replace it in your pantry. Hope this helps!
