Cheesy Black Bean Nachos with Tomatillo Pico de Gallo Salsa

These deliciously cheesy black bean nachos are exactly what we need to enjoy our weeknights!

Directions

  1.  Spread one package tortilla chips on baking sheet lined with parchment (blue corn, or white or yellow)
  2. Top with black beans (or to taste – can be whole or mashed/refried style), chopped tomatoes, jalapeno, sliced into thin rings – or to taste (can cut out seeds/membrane depending on desired level of spiciness), chopped red onion, So Delicious Dairy Free Cheddar Jack Shreds
  3. Bake for 10 minutes in 350-degree oven – or until cheeze has melted.
  4. Sprinkled fresh cilantro on top for garnish and serve with sides of guacamole and tomatillo pico for dipping.

For Salsa combine:

  1. Diced tomatoes
  2. diced tomatillos (roasted/charred: roast in oven for 15-20 minutes, or until tomatillos soften and skin begins to brown)
  3. Chopped red onion
  4. Jalapeno, finely chopped (can remove seeds/membranes depending on desired spiciness level)
  5. Fresh lime juice
  6. Finely chopped cilantro
  7. Salt to taste

For Guacamole combine:

  1. Avocados, mashed to desired texture/chunkiness
  2. Chopped cilantro
  3. Lime juice
  4. Firm tomato, de-seeded and diced
  5. Dice red onion
  6. Jalapeno, finely minced (or to taste)
  7. Salt/pepper to taste
