Caramel Corn Chocolate Cake

We couldn’t wait to play with Eat Pastry’s new gluten free, vegan friendly cake mixes. Add our caramel corn recipe and almond butter frosting, and you have a unique and indulgent treat.


  1. Make the cake according to directions in a 9×13 cake pan. If using the Eat Pastry brand, you will need three packets. let cool before slicing into one large square, and two smaller ones.
  2. Mix the almond butter, creamer and cocowhip to make the frosting. Add powdered sugar or agave syrup for additional sweetness, if desired.
  3. Layer the cake and frosting on a serving platter, set aside.
  4. To make the caramel, melt vegan butter, agave syrup and brown sugar on medium low heat for 10-15 minutes, until it coats the back of a spoon without running off.  Add creamer and stir until combined and creamy. Toss the caramel sauce in a bowl with the prepared popcorn.
  5. Top the cake with caramel corn and serve.
