Bounty Bowl with Vegan Tahini Lemon Sauce

This colorful bowl makes a hearty, delicious and do-able meal.



  1. Peel and grate carrots; slice cucumbers and radishes. Set aside.
  2. Tear kale into bite sized pieces, wash well; steam until just tender.
  3. Blend ingredients for Vegan Tahini Lemon Sauce (below).
  4. Arrange beans and vegetables over rice, then drizzle Tahini Lemon Sauce on top.
