Baked Purple Sweet Potato Fries

Baked, crispy and delicious!


  1. Scrub and peel the sweet potatoes, then cut into long 1/2” thick fries.
  2. Soak the cut sweet potatoes in salted cold water for about 30 minutes.
  3. Rinse the potatoes in a colander under cold water and pat dry.
  4. Toss with olive oil and spices then place on a parchment lined baking sheet.
  5. Bake at 425 degrees for 25 minutes, then flip the fries, sprinkle with remaining olive oil and salt, and bake for another 25 min.
  6. The fries are done when they are crispy to your liking.
  7. Serve hot with Hazelnut Spinach Pesto (trust us!)
