A little bit of sunshine has us thinking about casual dining al fresco. Specifically, tacos! If you love a tender, crisp taco filling with slaw and the creamy, tanginess of tartar sauce, you’re going to delight in this warm weather recipe! It’s so simple to mix layers of texture with fresh, fun flavors.

Coconut Lime Cauliflower Tacos with Creamy Tartar Sauce and Coleslaw


If you haven’t tried breading and baking sliced cauliflower before, you’ll be impressed by the crispness you’ll achieve without frying in a matter of minutes. Start by coating each slice in a tart and creamy mixture of Coconutmilk and lime that both infuses flavor and helps that panko blend stick. It’s this yummy blend of panko, corn meal and coconut that gets you the crisp you signed on for.


There’s a simple breading trick to avoid a sticky situation in a tidy kitchen. Order of operations is important here, but it’s still easy, we promise! Just remain calm despite your taco excitement and keep distinguishing between your left and right hands. Now, set up a station in this order:

Raw cauliflower slices > Coconutmilk yogurt mixture > panko mixture > parchment lined baking sheet.

Work in the same direction. Pick up the cauliflower with one hand, coat it in the wet stuff and drop it in the dry stuff. With the other hand, toss the cauliflower in the dry and lay it on the sheet. Bake at 400 degrees F. for about a half hour, until the situation turns golden. Cauliflower never looked so good, right? For a bit of drama, skip the tortilla and fill a purple cabbage leaf instead.


We get that slaw and tartar are the bib and tucker of this taco ensemble, so we spared no detail. Our faux fish gets dressed and adorned with sweet and sour slaw and a classic tartar sauce, complete with lemon, dill, and parsley.
