Sweet White Corn Soup

Directions for Preparation
Corn and Onion Sauté: In a medium pan, heat 2 teaspoons olive oil over medium-high heat. Add ½ cup corn and 1/3 cup onion stirring often until edges of corn are browned and onions are a golden brown. Place corn and onion mixture in a small bowl and set aside.
Corn soup: In a large pan, heat 1 tablespoon olive oil over medium heat, add onions and garlic stirring around pan until onions turn transparent then add the corn. Turn up heat to medium-high stirring often until some of the corn and onions’ edges are lightly browned. Add the coconut creamer and vegetable stock, white pepper, and sea salt and stir to combine. Lower heat to a simmer for about 3 minutes. Carefully pour corn mixture into a high powered blender (Vita-Mix blender works best) or food processor and blend until smooth (make sure to place a towel over the lid of the blender while blending, hot liquid will cause pressure in blender and can cause lid to lift and splatter hot liquid!). Once blended pour soup into bowls and top each with approximately 1 heaping tablespoon of the corn and onion sauté and sprinkle with chives. Makes 4 servings
