I am a certified health coach who works with gluten-free folks in need of inspiration and guidance to make their gluten-free diet healthy, easy and fun. Though I come from a traditional Italian background, I had to figure out how to go gluten, dairy, and egg-free after learning about my food intolerances in 2008. Now I'm a firm advocate of keeping things simple and am constantly inspired by more traditional cooking methods and whole, all-natural ingredients for the best tasting and most nutritious gluten-free meals. What are you
SO passionate about?

"I'm deeply passionate about good, healthy, gluten-free food, shedding light on the truth about how to go gluten-free the right way, and being conscious of our precious environment. I'm a big advocate of "Recycle, Renew, Reuse" and am constantly learning how I can reduce waste in my life. My grandparents and great aunts were huge advocates of gardening and have inspired me to expand my own home garden each year. I also love yoga (and teach it in the Philadelphia area) and find that it truly helps to ground my hectic life. It's become a great tool for me to share with clients in need of anxiety and stress reduction."

What’s SO great
about dairy free?

"There are actually a lot of reasons, but truthfully, it comes down to how much better I feel without dairy in my diet. I had no idea how sick milk products made me feel until I learned that I was intolerant to the casein protein found in all dairy and subsequently removed them. It's fairly common for folks sensitive to gluten or diagnosed with celiac to also have issues with dairy. Once I figured out how to tweak my recipes to be dairy-free, I stopped getting all phlegmy and congested and my stomach no longer felt sour or upset. Plus, it keeps the breakouts at bay (and now I constantly get complimented on how great my skin looks!). So add that all up, and you've got one much happier and healthier camper!"

I've been inspired by the eco-minded push within the company to demand more recyclable packaging as well as their involvement with the NON-GMO Project. If you were stranded on a desert island and could bring a lifetime supply of one of our products, which would you choose?

"The Unsweetened Almond Plus beverage. I just love it! I never thought I could love an unsweetened dairy alternative. However, as I removed extra sugar out of my diet, I found that this product actually has a really wonderful, sweet taste. I can drink it straight out of the container, but love to use it in all my recipes no matter whether they’re sweet or savory. And the best part is that no one ever notices that I didn't use milk... they love the consistency the almond milk provides and are pleasantly surprised that it's so versatile."

What’s the kindest thing
anyone has ever done for you?

"I have to give a total shout-out to my mom here. She has been my unwavering fan through thick and thin and is always there for me. She shows up to my classes all the time, shares my newsletters, and is just incredibly supportive. I'm not sure if I could pinpoint one moment, but as I get older, I’ve come to realize how much my mom always does for me and it's that unconditional love and kindness that is truly awe-inspiring. She just never stops giving, and it inspires me to give more and more to my clients and my community."

If you could be a superhero,
what would you want your
superpowers to be? Why?

"I'd definitely want to have the power to fly. I used to have dreams of doing that as a child and would love to feel that natural sense of freedom. I'd also love to be able to breathe underwater because there's so much incredible beauty to witness under the oceans. The coral reefs remind me of little fish 'cities' filled with color and liveliness that I would love to enjoy."

I moved to Salt Lake City seven years ago with my husband and three boys to partake in the great outdoors. I enjoy skiing, biking, and hiking along with being an avid “bootcamper.” I love being spontaneous and meeting new people, but I also believe in traditions and maintaining strong family relationships. I think laughter is much needed in everyday life. My motto has always been…LIVE LIFE TO THE FULLEST!

What are you
SO passionate about?

"I am SO passionate about exercising. I have really enjoyed a cross range between yoga and boot camp. I think they balance each other nicely and strengthen me completely. I am also SO passionate about my family. As independent as we are, I love when we can all participate in a family activity...skiing/snowboarding, mountain biking, or scuba diving."

What’s SO great
about dairy free?

"Truth is, I love dairy, but it doesn’t love me!! Being dairy-free is a major breakthrough for me because it agrees with my stomach. Dairy-free products have come a long way and there are more and more items to enjoy that are SO delicious."

"Because I am lactose AND fructose intolerant, discovering the wonderful world of SO Delicious has offered so many yummy choices. I am without a doubt an ice cream eater. But I had totally given up on ice cream because the options for us lactose intolerant folks were not at all to my liking. Thank you for giving that back to me. Honestly, SO Delicious ice cream and ice cream bars are tasty, creamy and ohhh SO delicious. "

If you were stranded on a desert island and could bring a lifetime supply of one of our products, which would you choose?

"Of course... ICE CREAM. But I can’t tell you my favorite flavor… I love them all!"

What’s the kindest thing
anyone has ever done for you?

"When I first moved to Salt Lake City, I was grocery shopping with my kids. At the checkout I realized I had forgotten my wallet. The lady behind me in line stepped up and paid our bill. I was in complete shock. I tried to say no, but she handed the cashier a check for our purchases. I have never had that happen to me, ever. I did, however, send her repayment and proceeded to “pay it forward” a few years later with someone in the same situation. It restored my faith in humankind and my children saw firsthand the kindness of others."

If you could be a superhero,
what would you want your
superpowers to be? Why?

"My superpower would be the ability to reverse time. When bad things happened to good people, I could be that hero, go back in time and intervene to prevent an unfortunate outcome."

From an early age, my parents knew how important staying active was —both mentally and physically — and kept us engaged in a number of sports. I want to bring the same message of staying active and eating healthy that was ingrained in me from a young age to the current generation! Presently, I’m training for 15-20 events in 2013, which will include not only triathlons, but also running events from 5k’s to my first half marathon. I’ve been offering free kids’ fitness camps for the past three months and I am looking forward to expanding into other areas of Seattle to get more kids active! More about me

"I am SO passionate about helping children and families develop healthy habits and live more active lives. I want to be a positive role model, and through community outreach, I hope to educate people on what it is to live a healthy plant-based lifestyle."

about dairy free?

"To me, the best part about being dairy-free is the comfort in knowing that no animals have suffered for my benefit. I’ve been vegan for 9 years and have recognized the health benefits associated with living a dairy-free lifestyle. With all the additives in dairy products, they do more harm than good and are leading to multiple health problems for the current generation. In some cases, these issues can be slowed or prevented by going dairy-free."

"I chose SO Delicious because it’s a locally-owned Pacific Northwest company that shares in my passion and belief of healthier living through a dairy-free lifestyle. If you were stranded on a desert island and could bring a lifetime supply of one of our products, which would you choose?

"Currently, my two favorites (because I cannot choose just one) are: Original Almond Plus and the Chocolate Coconut Milk beverages. I have the Almond Plus beverage almost every morning in my protein shake. I love this product because it has five grams of protein per serving and the taste is great in smoothies, granola, and cereal. I save the Chocolate Coconut milk for when I’m craving something sweet that is also healthy."

What’s the kindest thing anyone has ever done for you?

"The kindest thing someone has done for me was two years ago when I decided to take a leap of faith and make the move from Eugene, Oregon, where I had lived for 9 years, to Seattle, Washington. One of my best friends in Seattle graciously provided me with a place to stay until I got on my feet. Without his kindness, I would not be where I am today and I cannot thank him enough for the opportunity to start this new adventure in Seattle!"

If you could be a superhero, what would you want your superpowers to be? Why?

"My power would be to have ultimate charisma, and my superhero name would be Captain Charisma. Charisma is defined as someone capable of influencing or inspiring large numbers of people. I would use my powers to help and motivate others in their health and fitness goals. To have the power to inspire someone to do five more pushups or run that last mile — or even to start their first — would be an amazing gift."

"Living an authentic life. Practicing what I preach. I thrive in living a healthy, active lifestyle. Authentically healthy living can look so many different ways depending on who you are, your age, your gender, where you live, the time of year... do what is healthy for YOUR body and mind. Experiment until you find your equilibrium and trust that it may ebb and flow as your life evolves."

"Dairy doesn't do anything for you. Period. It’s an antiquated misconception. Google it, watch a documentary. The FDA drives the dairy industry and makes people believe they need it. Take responsibility for your own health, rather than following the mass media. Dairy-free is great because it's EASY! Plus, digestion is better and you have more energy."

"I believe in brands that march to the beat of their own drummer. I love the ‘next thing’ and supporting the up-and-coming brands in any category... apparel, food, design etc. The people who run So Delicious Dairy Free embody their mission, and that totally resonates with me."

"I would have to say that generally speaking, the people in my life who love, accept and encourage me to be who I AM provide a sense of everlasting kindness."

what would you want your
superpowers to be? Why?

"I'd be a mermaid (Is that considered a superhero?!) I LOVE being underwater. It's so peaceful... It's just you and your breath and the flow of the water around you."
